Our ward party was a creative idea. We toured the grave sites of past prophets. Of course there was lots of yummy food.

Canning Jam

Ingredients:

Berries/Fruit: 3-4 lbs or 4-5 pints

Sugar: 3-4 cups

Low sugar pectin

Butter 1 T

See the pectin directions for more specific amounts

Supplies:

Canner

Cookie sheet

Magnet

Food Processor

Jars and lids (4-5 pints)

Measuring cup

Stirring spoon

Funnel

Jar lifter

Dutch oven pan

Directions (takes about an hour after fruit is prepped):

4-5” of water in canner
Heat lids and bottles on cookie sheet
prepare berries (food processor, mash)
put in pan and add pectin and 1 T butter
Heat to boiling (about 15 minutes)
measure sugar
add sugar, heat to boiling again (takes about 4 minutes)
boil about 1 minute more
skim of foam if needed
fill 4-5 pint jars (takes about 10 minutes)
We are at 4,500 ft elevation, process in boiling water for 10 minutes + 10 extra

Prices:

$3.50 blue berries = $2.62/pint jar (16 oz.)

1.50/lb strawberries= 1.01/pint (16 oz)

5.54/lb raspberries= 3.80/pint (16oz)

3.3/lb raspberries = 2.66/pint (16 oz)

.88/lb apricot = .74/pint (16 oz)

LDS Humanitarian Center tour

Last night we had an enrichment group activity to see "Welfare Square." It turned out that I made reservations at the LDS Humanitarian Center instead. OOOPS! It was fun anyway. It was very uplifting and so wonderful to see what the church is doing.

Afterward we all went to Leatherbys.

#49 She lives in Barrington Park, has been here for about a year, moved here from student housing at the U of U, married about a year and a half.
Her baby is named Anna and is 3 months old. She loves and tells friends about the book "Baby Wise", it helps her a lot.
As a child she lived in Newport News, Virginia. She went to junior high and high school in Orem
Her favorite vacation place is Lake Powell on a boat.
Her advice for good health is to get a good night's sleep and walk every day.
Her favorite season is Spring, her favorite subject in school was mythology
TV programs they like to watch are "The Office" and "So You Think You Can Dance"
She works as a dental assistant.

October Book Club

The October Book Club was fantastic. Emalee Banks hosted and chose the book- In the Beginning, by Chaim Potok. Since it was a Jewish book, Emalee served homemade hallah bread, apples and honey. (These are traditional foods eaten during Rosh Hashanah which was celebrated from Sept. 29-Oct. 1 this year.) She also provided Apple Beer, which was so delicious and fun to try. Don't worry, your lovely Relief Society sisters are drinking non-alcoholic beverages.

Apple Pudding Cake- Rosalie Nolan

Apple Pudding Cake- Revised

1 ¾ c. sugar

3 eggs

½ c. margarine

Cream well and add:

2 c. flour

½ tsp salt

2 tsp. Baking soda

¼ tsp cloves

2 tsp. Cinnamon

1 tsp. Nutmeg

Mix well and add:

4 large apples (chopped small)

1 c. nuts

Bake in greased and flour 9x13 pan at 350 degrees for 40 to 50 minutes. Top with sauce and Whipped cream

Sauce:

½ c. butter

1 c. sugar

½ c. evaporated milk

½ tsp vanilla

Dash of nutmeg

Heat until well blended, but not boiling, add vanilla and nutmeg last.

Mississippi Mud Cake

Mississippi Mud Cake- Revised

2 cups sugar

1 cup shortening

4 eggs

1-1/2 cups flour

1/3 cup cocoa

3 tsp vanilla

1 cup nuts

Cook and bake at 350 degrees for about 45 minutes.

Sprinkle marshmallows on top while hot (enough to cover cake)

Frost with:

1 box powdered sugar

1/2 cup cocoa

1 stick butter or margarine

1/2 cup evaporated milk

1 tsp vanilla

1 cup nuts

First of all, let me say that Joyce Witbeck and the committee have done a fantastic job for the last several years. The activities were always well planned, creative, and fun. Thank you so much Joyce. We will miss you working with us.

Diana Iwaniec is the new leader and we are excited to work with her as well. Though Diana is a full time working mom and student she has agreed to give us her best. Thank you Diana! I am sure she would love to hear your suggestions for upcoming activities. Leave a comment here if you would like.

Old Fashion Quilting Bee

We were able to complete 11 crib sized quilts for the Humanitarian Center. The picture above shows the ladies tying hair to put on the humanitarian dolls. Ladies also donated fabric for doll dresses. We enjoyed our own packed lunches and cookies from the Cookie Tree.

For our May Girls Night Out, we went to the Spaghetti Factory. It was a lot of fun to be with "girls" of all ages! Thanks Madison for setting it up.

Rhodes Bakery- June 11th 2008

For Enrichment night this summer, we went to the Corporate offices of Rhodes Bakery. They had a fantastic demonstration, and gave us tons to sample. It was a fun evening. The idea for this activity was from Hazel Beck, who was sick the night we did and could not go. Thanks to Joyce and the committee, it was a great success.
